Job description The Department of Safety and Quality of Meat in Kulmbach is interested in the nitrogen balance and reactivity of nitrite and nitrate in cured meat products. Within the scope of this work, initial experiments with isotope-labelled sodium nitrite will be performed in cooperation with the Department of Safety and Quality of Milk and Fish at the location Kiel. This should clarify the open question concerning the quantitative balance and the reactivity of nitrite in different fractions (liquid phase, fat and in particular different protein fractions). Here, isotope ratio mass spectrometry (IRMS) is to be used. Based on this, in the further course of the research work, nitrite-induced protein modifications of meat proteins will be investigated by the mass spectrometric analysis of tryptic peptides applying a coupling of high performance liquid chromatography and high resolution tandem mass spectrometry (HPLC-QToF-MS/MS).
