Job Description

Job Summary:

Responsible for leading Food Safety and Sanitation for the Disney Cruise Line (DCL) fleet. Drive all public health related processes for existing ships, Castaway Cay, dry docks and new builds. Leverage the overall strategic vision of DCL to ensure buy-in and support from onboard, shoreside and island teams. Lead, mentor and develop onboard team of Food Safety and Sanitation Officers and Chief Stewards. Seek out ways to elevate the Crew satisfaction levels and all USPH and international inspection results through training and innovation. Oversee all contractual agreements and sailing schedules for consultants and vendors. Financially responsible for overseeing all chemical, vendor and consultant budgets.

Responsibilities:

  • Lead the Food Safety and Sanitation Officer and Chief Steward teams to achieve consistently high results for all internal and external inspections
  • Have regular and open communication with Food Safety and Sanitation Officers, Chief Stewards, Food Managers, Food and Beverage Services Managers, Marine and Technical Operations, Executive Housekeepers, Island Director and Hotel Directors
  • Act as coach, mentor and advisor to the onboard teams
  • Establish effective partnerships with other lines of business and foster teamwork amongst shipboard, shoreside and island teams
  • Determine business priorities and provide support to execute new initiatives
  • Serve as a change agent to integrate processes, remove barriers and align performance goals
  • Ensure all contractual agreements are upheld for consultants and vendors; develop schedules and arrange logistics for their regular sailings
  • Drive talent management for the Food Safety and Sanitation and Chief Steward teams by overseeing staffing decisions including hiring and promotions, along with providing direct and indirect reports for professional development and succession planning
  • Serve as a trip partner for recruiting
  • Serve as shoreside public health specialist; responsible for training all Food Safety and Sanitation Officers on Disney Cruise Line public health standards
  • Monitor policies, procedures and record keeping to ensure the operation is in compliance with all applicable national and international laws
  • Monitor compliance of the Vessel Sanitation Program and recommend corrective action in the areas of food safety, personnel hygiene, housekeeping, laundry, wardrobe, AGE audits, Youth Activities areas and the spa & salon
  • Oversee and approve all LOG updates and process changes for the department
  • Conduct audits of the onboard inspections and make changes as necessary based on results
  • Lead all new build and dry dock initiatives around safety and sanitation, ensuring compliance with all United States Public Health (USPH) requirements
  • Assist with overall Food and Beverage support in regards to processes and new implementations as needed
  • In conjunction with the Hotel Directors, strategically determine leaders from each ship to send to USPH trainings
  • Influence key partners; actively participate in the development of inspiring trainings for the onboard and island teams to gain buy-in of safety and sanitation related practices at all levels
  • Oversee materials presented and follow up from monthly Food Safety and Sanitation Committee meetings
  • Drive actions and needs during times of high levels of AGE including organization of support teams for post-cruise needs
  • Provide communication to the shipboard teams on any changes to USPH requirements or codes
  • Partner with WDW Sourcing and to look for best practices, products and industry trends
  • Manage Rentokil contract including scheduling of regular support visits and urgent needs; Walk with them on a regular basis for ongoing process improvement opportunities
  • Establish guidelines, set expectations and schedule visits for pest control dogs; Coordinate onboard support during these walks
  • Maintain vendor and consultant relationships
  • SMS responsibility for upholding the general safety management responsibilities specified in the Safety Management System

Basic Qualifications:

  • 4+ years experience in F&B, Food Safety, Environmental Health or related managerial position
  • Ability to lead a diverse team responsible for safety-critical roles and actions throughout the ship
  • Versatile in thought processes and able to provide direction and influence to external companies and consultants
  • Ability to understand health codes and translate into actions affecting the operation
  • Hold a USPH Vessel Sanitation Certificate

Preferred Qualifications:

  • 3 years experience shipboard Food Safety & Sanitation Officer

Required Education

  • Bachelors Degree or equivalent experience
