Job Description
Job Summary:
In partnership with the Culinary team, the Chief Steward will oversee and maintain all Heart of House areas, including dish room operations for banquets and restaurants, banquet plating, and food running.
You will report to Culinary Director of the Disneyland Resort Hotels.
Responsibilities:
- Manage the daily kitchen stewarding operations and Cast.
- Manage all daily operations and weekly schedules.
- Oversee Cast Members not engaged in cooking, Stewarding Cast Members.
- Order necessary materials and supplies.
- Manage inventory of ordered materials and supplies.
- Ensure Cast Members have supplies, equipment and tools necessary to perform their responsibilities.
- Manage all china, glass, and silverware equipment.
- Conduct china, glass, and silverware inventories on a quarterly basis including descriptive binder with quantity attached.
- Inspect supplies, equipment and work areas to ensure efficient service.
- Investigate reports and follow-up on Cast Member accidents.
- Manage proper cleaning routines for large and small pieces of equipment.
- Manage proper use and cleaning of all dish machines.
- Manage compliance with Stewarding team with proper food handling and sanitation standards.
- Lead, coach, motivate, and inspire the Stewarding team to perform at their highest potential that is safe and efficient.
- Celebrate success by publicly recognizing Cast Members.
- Establish performance expectations following job description and training.
- Maintain an open door policy with Cast Members.
- Help manage the kitchens controllable expenses to achieve budgeted goals.
- Participation in meetings and communicates with the team.
- Participate in the process to interview for new hires and promote Cast Members.
- Train Cast Members in Safety procedures.
- Participate in Cast Member progressive discipline procedures.
- Ensure disciplinary procedures and documentation are completed.
- Comply with all company policies, procedures and guidelines.
Basic Qualifications:
- 4+ years of experience in the food and beverage, culinary, procurement or related professional area.
- 5+ years of experience in Hotel and Restaurant Management, Business Administration or related major to include stewarding experience and managerial level.
Preferred Qualifications:
- Certified Food Safety Manager Certificate or Equivalent.
- Bilingual skills.
